Frito Corn Salad: A Delicious Summer Side Dish

Frito Corn Salad is a summer snack that is perfect for picnics, backyard barbecues, potlucks and even camping! It’s creamy and salty with just the right amount of crunch! A huge hit for the whole family!

Summer is nearly here and that means it’s time to pull out some of my barbecue favorites!

One of which is this Frito Corn Salad recipe.

For me, texture is a big thing when it comes to food. And this Frito Corn Salad has the perfect texture! It’s creamy with a whole lot of crunch. Pair it with the cheese and it’s a delicious dish that is made for summer.

Potlucks, barbecues, picnics – you name it. This corn salad with Fritos was made for the occasion.

It doesn’t hurt that it’s ridiculously simple to make, either. It’s one of those throw together dishes that let you focus on spending time outside and with your friends and family.

Plus, this Frito Corn Salad is super easy to customize. Try chili cheese, honey BBQ, or even ranch Fritos to change it up some.

Just be sure that you don’t add the Fritos until you’re ready to serve the dish. Otherwise the perfect crunchy salad will turn into a less than awesome soggy salad.

Frito Corn Salad Recipe

Frito Corn Salad
Ingredients
  • 2 Cups Shredded Cheddar Cheese
  • 12 Oz Frozen Sweet Corn Thawed
  • 1/2 Cup Red Bell Pepper Chopped
  • 1/2 Cup Green Bell Pepper Chopped
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 1/4 Cup Diced Red Onion (Optional)
  • 10 Oz Fritos
Instructions
  1. In a large bowl, combine everything except for the Fritos and mix thoroughly.

  2. Keep in refrigerator until ready to serve. When serving, crush the Fritos on top a bit to make it easier for eating.

Recipe Notes
  1. Toss the Fritos in the freezer an hour or more before serving to keep them crispier longer. Make sure you do not add the Fritos until you’re about to serve the dish.
  2. You can always hange up the Frito flavor to give the salad a new twist!

This is also a great dish to serve while camping! Make the Frito Corn Salad ahead of time (without the Fritos) and bring with you for your trip. (Be sure to keep cold!) Also bring along individual serving size bags of Fritos.

When you want to enjoy the Frito Corn Salad, pull out the salad and place the desired amount into the bags of Fritos. It suddenly becomes a portable snack (kind of like walking tacos!) and it’s great to enjoy in the outdoors.

You should have no problem finding a reason to make this Frito Corn Salad over the summer!
