We’re expanding our garden BIG time this year and we’ve added some new trees to the mix.

This year, we’ve added a lemon and key lime tree to our homestead and I am ridiculously excited about this.

Why? Because we live in Wisconsin. And these beautiful citrus trees are not meant to thrive here. But we figured out how to make it work.

Our new trees will enjoy the balmy summer (which is already here considering the fact that we’ll be hitting 90F this weekend) and then spend the winter indoors with us. We got dwarf trees that are perfect for containers and we should see fruit within a few years. Awesome, right?

Now you might be wondering what on earth that has to do with this Lemon Herb Spritzer recipe though.

Citrus drinks are some of my absolute favorite beverages during the warmer months. And I’m kind of excited to make this recipe in a few years when we’ll have fresh lemons and fresh herbs to make it.

Because this refreshing drink is packed with delicious refreshing flavors. Lemon and ginger paired with fresh herbs – YUM!

I love the combination of the bright citrus notes and the earthiness of the herbs like basil and thyme. And ginger is such a great addition to so many drinks! (Try it in a peach mango smoothie or this ginger peach iced tea. SO GOOD!)

Ingredients
  • 1 Cup Water
  • 1/3 Cup Lemon Juice
  • 2 Tbsp Honey
  • 2 Tbsp Mint Fresh and chopped into pieces
  • 2 Tbsp Basil Fresh and chopped into pieces
  • 2 Tsp Lemon Zest
  • 2 Tsp Ginger Minced
  • 2 Sprigs Thyme
  • 2 Cups Sparkling Water
  • 4 oz Vodka (Optional)
  • 1 Lemon Sliced
Instructions
  1. Combine the honey and plain water in a medium pan over medium heat. Let the honey dissolve completely, stirring frequently.

  2. Remove from heat and let cool before pouring into a pitcher. (About 10-15 min.)

  3. Add lemon juice, herbs, ginger and lemon slices. Add in the vodka and gently stir if using. Place in the refrigerator to let chill before serving.

  4. Right before serving, add in the sparkling water. Gently stir. Pour into glasses with ice and enjoy!

Another thing I love about this Lemon Herb Spritzer is that it’s great for kids or adults. Leave the vodka out and it’s a sparkling citrus drink that kids will love. Add in the vodka and it’s a bright, summery drink that’s perfect for relaxing in the backyard.
