I can already tell you that I’m going to be the mom that sometimes lets ice cream qualify as dinner some days.

It’s not because I don’t care. And it’s not even because I think rules like no dessert before you finish your dinner are meant to be broken (even though I whole heartedly believe that.)

This means pizza for dinner is a regular thing in our house. And not just any pizza. Red Baron pizza. Because this is the kind of pizza that makes me forget all of the toys I need to clean up yet.

It’s also the pizza that we lived off of when Lily was born. Fruit and pizza were staples in our house when she arrived because I wanted easy. I didn’t want to be cooking. I wanted to be couch deep in baby snuggles and Netflix binges. And I was.

B) It’s easy. It’s the kind of dessert that looks pretty but doesn’t actually require hours of labor. And as a mom, that’s right up my alley.

C) It has fruit. So I can kind of pass it off as semi-healthy.

D) It can feed a crowd. (But it doesn’t have to, winkwink.)

E) It’s super customizable. So if you’ve got the world’s pickiest eaters under your roof, you can totally change up the fruit. Or create little sections with everyone’s favorites with a do not cross line for the “IF CERTAIN FOODS TOUCH, MY HEAD WILL EXPLODE!” eaters.

Ingredients
For the Crust
  • Your Favorite Sugar Cookie Mix (or recipe)
For The Icing
  • 1 8oz Cream Cheese
  • 1 Tbsp Vanilla Extract
  • 3 Cups Powdered Sugar
  • 1 Stick Butter Softened
For The Toppings
  • 2-3 Kiwis Peeled + Sliced
  • 20 Mandarin Oranges
  • 90-100 Blueberries
  • 10-12 Strawberries Sliced
Instructions
For The Crust
  1. Preheat the oven to the temperature the recipe or package states for your sugar cookies.

  2. Make the sugar cookie mix according to the package or recipe directions.

  3. Spray a cookie sheet and spread the dough evenly across the entire sheet.

  4. Bake according to package/recipe directions or until the crust is a very light golden brown.

  5. Let cool fully before icing.

For The Icing
  1. Combine all of the ingredients in a mixing bowl and mix until smooth.

  2. Once the sugar cookie dough crust has cooled, spread the icing evenly over the entire crust.

For The Toppings
  1. Layer the slices of fruit on top of the iced cookie crust in columns. Press slightly to make sure they stick. Start with strawberries then blueberries. Then kiwis then blueberries. Then oranges then blueberries. Repeat until you hit the edge.

  2. Store in the refrigerator.

Recipe Notes

Nearly any fruit can be used for this pizza. Just make sure it's not too watery.
