Avocado Corn and Black Bean Taquitos

  • 10 Corn Tortillas
  • 1/2 Cup Black Beans
  • 1/2 Cup Corn
  • 1/2 Cup Cheese
  • 1/2 Tsp Lime Juice
  • 1 Tsp Cumin
  • 1 Tsp Chili Powder
  • Pinch of Salt
  • Oil for frying
  1. Preheat oil in a shallow pan.
  2. Combine all of the ingredients excluding the tortillas.
  3. Spoon 2 Tbsp of the mixture into the middle of a corn tortilla and roll up. Use a toothpick to keep it tight.
  4. Set it in the oil to fry with the seam down until all sides are golden brown.
  5. Repeat with the rest of the tortillas.
