Grilled Teriyaki Shrimp Stir Fry with Pineapple

Ingredients
  • 1 Pound Shrimp
  • 2 Tbsp Olive Oil
  • 1 Tsp Salt
  • 1 Tsp Ginger
  • 1 Large Onion Sliced in Strips
  • 1 Cup Sweet Peppers Sliced in Strips
  • 1 Cup Zucchini Sliced in Strips
  • 1 Cup Yellow Squash Sliced in Strips
  • 1 Cup Snap Peas
  • 1 Cup Pineapple Chunks
  • 1/3 Cup PF Chang's® Teriyaki Sauce
Instructions
  1. Combine shrimp, oil, salt, and ginger in a gallon size zip lock bag. Place in fridge to marinate at least 1 hour.

  2. Preheat grill on medium high heat.

  3. Place one piece of pineapple on a skewer. Place two shrimp on the skewer. Alternate between pineapple and shrimp until all shrimp is on skewers

  4. Combine onions, peppers, zucchini, squash, and snap peas together in a grill safe pan. Place on grill. Stir every few minutes making sure nothing overcooks.

  5. Place shrimp skewers on the grill. Grill 2- 3 minutes per side. 

  6. Combine shrimp, pineapple, and vegetables in a bowl. Stir in teriyaki sauce.

  7. Enjoy!
