You can hardly even tell that these oven baked zucchini fries weren't tossed in a fryer! Paired with the marinara sauce, the whole family will love this healthy snack

Ingredients
Zucchini Fries
  • 2 Small/Firm Zucchini Halved and cut into ΒΌ-inch thick slices
  • 1/2 Cup Almond or Coconut Flour
  • 1 Tsp Smoked Paprika
  • 1 Tsp Italian Seasoning
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • Salt and Pepper To taste
  • 2 Large Eggs
  • 1 Tbsp Water
  • 1 Cup Freshly Grated Parmesan Cheese
Marinara Sauce
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Tomato Paste
  • 3 Garlic Cloves Minced
  • 1 Tsp Dried Oregano
  • 1/2 Tsp Red Pepper Flakes
  • 1 8oz Can of Crushed Tomatoes
  • 1/4 Cup Fresh Basil Chopped
  • 1/4 Cup Fresh Parsley Chopped
  • Salt and Pepper To taste
Instructions
Zucchini Fries
  1. Preheat the oven to 400F and place a metal baking rack inside of a baking sheet then set aside.

  2. In a shallow bowl, combine the flour and the seasonings.

  3. In a separate shallow bowl, whisk together the eggs, add the water, and whisk together until frothy.

  4. In a third bowl, add the Parmesan cheese.

  5. Dredge the zucchini pieces in the seasoned flour then dip into the egg mixture. After the excess egg drips off, place in the bowl with Parmesan cheese. Turn each zucchini fry to evenly coat it and place on the baking rack in the baking sheet.

  6. Repeat and then place the baking sheet in the preheated oven. Roast the zucchini until the fries are crispy and golden (approximately 20-30 minutes), flipping halfway through.

  7. Remove from the oven and serve immediately with the marinara sauce.

Marinara Sauce
  1. Combine olive oil, garlic, oregano, red pepper flakes, and tomato paste in a medium saucepan.

  2. Cook over medium-high heat, stirring frequently, until the garlic is fragrant (approximately 1-2 minutes.) Season with salt and pepper if using.

  3. Reduce heat and add in the crushed tomatoes. Cook around 8-10 minutes or until the marinara sauce is bubble and has slightly reduced. Remove from heat and add in the basil and parsley.

  4. Serve warm with the oven baked zucchini fries.
