Jalapeno Lime Shrimp and Rice
Ingredients
  • 1/2 cup rice
  • 1 cup vegetable broth
  • 1 lb. shrimp peeled and cleaned
  • 1/2 jalapeno seeds removed and chopped
  • 2 garlic cloves chopped
  • 1 lime juiced
  • 1 tbsp. extra virgin olive oil
  • 1 cup vegetable broth
  • Salt and pepper to taste
Instructions
  1. Prepare rice in vegetable broth. 

  2. While rice is cooking, heat olive oil in a large saucepan over medium heat. 
  3. Add garlic and cook until fragrant and golden. 
  4. Add lime juice and jalapeno slices.
  5. Stir in vegetable broth. 

  6. Bring sauce to a boil and turn temperature down to a low simmer. 
  7. Add shrimp and cook through until pink. 
  8. Add cilantro and season with salt and pepper. 
  9. Plate shrimp over rice. 
  10. Spoon sauce over the shrimp and rice before serving.
