Preheat griddle or pan to medium high heat.
Combine all of the ingredients in a blender. Blend until smooth. Let sit for a few minutes for the bubbles to settle.
Pour 1/4 cup batter on a greased griddle or pan. Cook 3-4 minutes or until the bottom is lightly browned and the top is no longer runny.
Flip and cook an additional 2-3 minutes or until both sides are lightly browned. Repeat until finished with batter.
Top pancakes with desired toppings.
